Potato Salad
Can someone recommend a local place that makes amazing homemade potato salad? I find that most stores use too much mayo or it seems they are using canned potatoes ?!?!?!

Tony's Luncheonette on Rt 57 has the best homemade potato salad [and macaroni salad and cole slaw] I have ever found. I traveled for work for 40 years and I found good and bad but his was always the best. If friends or family come to visit they insist on stopping by and if I am invited to their place the rule is "Don't forget the potato salad". I guarantee you won't regret trying it.
Tony' s has the absolute best. Just like homemade...because it is. Great local business and wonderful family.
If you want to make your own, I have some tricks that make awesome potato salad.
No boiling. Very easy.
Not quite local, but Hayek’s up in Newton has the best around in my opinion.
Much closer and still very good is Piggy’s.

It's all just Tater (That's TAY-TER, not totter, as in teeter-totter) Salad to me.
The best is Mom's or Aunt Jeanie's.
After that comes Tony's, Anderson Country Store and Cafe, Sub Shack or Piggy's.
We like Dale's in Blairstown, branchville, and I think they have a location in Andover but I have never been to that one.

I don't know what Hayak's (Newton) puts in their potato salad, but it's delicious. I think celery, onions and possibly vinegar. it has a delicious extra in it.
I steam the potatoes!
It works so well and is so easy. I personally leave the skin on because I like it like that but if you want, peel them first.
Cut each potato into quarters & steam. Depending on type of potato, takes about 15-20 minutes (test with toothpick to see if soft)
While potatoes are steaming, I dice onions and put in large bowl. Cut celery stalks in half lenghtwise and thinly slice and add to bowl.
When potatoes are done and *while still hot*, take 2-3 pieces out and cut up on plate........ sprinkle with vinegar (or pickle juice if you prefer) and add to bowl.
I am generous with the vinegar...... like about 2 tsp. for every 3 pieces of potato.
Continue until all potatoes are done. Mix to distribute onions & celery.
Next trick ....... sprinkle with a little water and mix. Do this several times ..... potatoes will absorb some water ..... stop when potatoes are just-moistened. You don't want them wet.
Then add the mayo ----- you will not need much because the potatoes have already absorbed the vinegar & water. But if you like a heavy coating --- go for it.
Last --- add salt and mix.
I like to sprinkle the top with some paprika, parsley and chives.
If you don't have fresh herbs, dried parsley and chives are fine. Makes it look so nice.
The important detail to remember is to dress the potato with the vinegar while still hot or warm so it absorbs the vinegar.
This potato salad is quite delicious and I am often requested to bring it to gatherings.
Not to pat myself on the back......but I make a potato salad that is dynamite!! I use scallions instead of onion, of course celery, a little salt and pepper. And then I use a mixture of mayonnaise, a bit of sugar, a squirt of lemon juice and heavy cream for the dressing. It's very creamy and has a very slight sweetness to it. I get raves whenever I serve it. I have been told by people who don't like potato salad that they love mine and must have the recipe. I found it in a cookbook that I bought in the dollar store. I also use the same dressing for coleslaw and macaroni salad and get the same reaction.
P.S. You really can substitute the heavy cream with whatever dairy product you have. It will just not be quite as rich.

In fact I do something similar that you do for my macaroni salad --- I don't use heavy cream but I mix mayo with a little sour cream.
All these variations are creamy and good!
If you have celery seed that's good to add to coleslaw too.
My potato salad recipe was used in one of the markets in Hackettstown years ago and I still make it to this day. I also cut up hard boiled eggs in my salad and add a dab or two of pickle relish and mustard....
Wouldn’t it be awesome if everyone met up and brought some of their own recipe or store bought for all of us to taste?

One of my favorite sandwiches is egg salad sandwich topped with a generous layer of potato salad. I first had this when a Hungarian friend in college shared her sandwich with me. Hooked ever since.
Add some sour cream and dill to any potato salad recipe that calls for mayonnaise and it will be amazing! Also, use small red potatoes and leave the skin on.
Favorite addition to potato - horseradish.
Favorite herb instead of dill - tarragon.
Both excellent in a potato salad. But also try tarragon with cukes, and horseradish in mashed.
I love the German potato salad that the Octoberfest has at the Long Valley Pub and Brewery.
Allamuchy General Store had the best - not sure if still open - it is the best in the area.

Sub Shack - is good but too much celery - it's like 60 percent potatoes/40 percent celery - good not great.
Here's a question about potatoes. Wanted to buy Yukon Gold potatoes this week at shoprite. EVERY single potato in EVERY bag of them had red marks all over them.
What the heck is that? I didn't buy of course.
A quick Google search reveals that is a very common condition to find on many different potatoes. Either on the skin or the flesh of the potato. Harmless.
I googled it and found nothing about the color red on potatoes. There was stuff about other things like blight, black color, etc. I will look again.
