Easter Dinner

Can anyone suggest sides that would go with fresh ham?


Green beans cooked in the ham juice, sweet potato, scalloped potatoes.

Sweet Potato Casserole


I make a Spiral Ham with scalloped potatoes, green beans with garlic, onions, steamed sweet potatoes and Biscuits…Happy Easter

Baked beans, macaroni salad, deviled eggs, cold slaw and any of the previous suggestions. If you have some favorite side recipes from family and friends go with them!

If you want to try something a little off the beaten path, give this a whirl. (When you read this it seems like a lot of work, but it's actually easy and pretty quick.):

Trim and halve a pound of brussels sprouts.
Using a vegetable peeler, peel thick strips of lemon zest, then coarsely chop, enough to make approx. 2 teaspoons.
In a large skillet, heat 3 tablespoons olive oil over medium-high. Add the brussels sprouts, season with 1/2 teaspoon salt and a few grinds of pepper, then arrange the brussels sprouts in an even layer, cut-side down. Scatter the lemon zest over the top and cook, undisturbed, until the brussels sprouts are well browned underneath, 3 to 5 minutes.
Add 1/2 teaspoon of red-pepper flakes, stir and cook until the brussels sprouts are crisp-tender, 2 to 3 minutes. Transfer to a bowl.
In the same skillet, heat another tablespoon olive oil over medium-high. Add an 18 oz. package of shelf-stable gnocchi to the pan, break up any that are stuck together, and cook covered and undisturbed, until golden brown on one side, 2 to 4 minutes. Add 6 tablespoons (in 6 pieces) of butter, season with salt and a generous amount of black pepper, and cook, stirring, until the butter is golden and foaming, with a nutty aroma, 1 to 2 minutes.
Stir the brussels sprouts back into the pan until warmed through. Serve with grated Parmesan.

rice pudding and scones for dessert!


For Passover, got a nice premade dinner, low fod-map, with brisket, kugel, charoset, spinach (bitter herbs?), carrot/turnip Sautee, matzo ball soup, and, of course --- macaroons for desert. Supported by Mt. Sinai Hospital, these folks give you restaurant quality from your micro. Have only made one Seder, so I figured, what the heck. It was marvelous. Brisket was peppery and melts in your mouth. Passed-over the gefilte though, too fishy.....

For Easter, going with a very small Dakin spiral boneless petite, sweet potatoes, brussels, and a walnut-vinegar spinach salad. The Dakin is 2.5lb, great for two. Easter chocolate for desert, have way more than for two --- TY Amazon.....
